The rich chocolate flavour satisfy my need for a sweet treat during this specific time of the month. Garnish them with your favourite fruits, nuts & syrups, these pancakes are the perfect addition to your weekly breakfast staples.

They are high in fibre making it Gut Healthy! What I love about this breakfast is that I get to enjoy it just as much as my body does. The fibre from the oat, buckwheat, fruits & nuts and enough to keep me satiated and gut happy (literally!).
The recipe consists of clean ingredient, nothing extra. Something I find extremely important in my diet & made a huge difference in my health is clean eating. I priorities and choose food that grow naturally or go through minimal transformation before it reaches my plate.
It is delicious! As well as being extremely easy to prepare, it is absolutely delicious and fail proof for people who just started to cook as well. What I love most about this recipe is the choice I face when it comes to the infinite toppings I could add to it. My go-to is often berries of all sorts with nuts and honey, but the options are infinite, which I LOVE.
Ingredients
- Gluten-Free Buckwheat Flour: If you are Celiac, make sure the flour is certified Gluten-Free.
- Gluten-Free Oats or Pre-made GF Oat Flour: If you are Celiac, make sure the oats are certified Gluten-Free.
- An egg: A large egg
- Almond Milk (Milk of choice): I love my Almond Milk, but coconut milk & other plant or dairy milk work as well. The choice is based on your personal preference.
- Vanilla extract: I use the Pure Madagascar Vanilla Extract by Simply Organic, but any vanilla extract on hand works.
- Cacao Powder: I use the Organic Cacao Powder from Rootalive, just make sure the chocolate you use is Cacao and not Cocoa. Simply put, these two differ in the way they were processed & Cacao is the less processed version.
Step by step Instructions
- Start by blending your oats into flour, if you do not have oat flour. Make sure to blend until it creates a fine powder. If you already have oat flour on hand, simply skip this step.
- Start by cracking your egg in a mixing bowl, then add your milk of choice, the vanilla extract & mix the wet ingredients together.
- Add your buckwheat and oat flours into the bowl and mix until smooth
- Add the cacao powder to your mixture as a final touch and mix again until smooth
- Heat up your pan, add some avocado oil or olive oil & start cooking your pancakes (remember to keep the heat to a medium)
- When both sides are cooked, place in a plate, and add toppings of choice.
